The Sibu is an exemplary example of a natural processed Ethiopian from the Guji Zone in Sidamo, Ethiopia. Guji coffee's are known for their complexity of sweetness, fruit and acidity and the Sibu (owned a run by a single family since 2004) presents with notes of plum, cherry, apricot, port-wine and chocolate. This is a medium roast, but works just as well in milk drinks as it does black (it's currently our team's favorite coffee).
